Can anyone help

up to my neck in wiring loom at present.

I inherited the kit and wiring labeling, some of which is now not readable.

I have some wires with a black rectangular block on it, with a plate sticking out with hole, i assume this is a mounting hole maybe to earth.

It has 2 black wires from it, one with a connector which looks like a screw thread and the other a female connector.

what are they, how do they connect?

pictures of installed one might help greatly.

1 other question - how many connects to the starter? just the 1 large red cable?

Can't help with the connector block. The starter has a wire from the ignition switch going to the starter solenoid coil (was blue/black in my case but yours may be different) it also has the large red wire going from the battery to the starter motor. You may also find that the red wire from the alternator also goes to the same large connection on the starter motor. This then uses the large red starter wire as a route to charge the battery and needs fewer connections to the battery post itself
