hi all, where is the best place to buy the stainless panels from and what size do you recomend thanks

Personally I would look through the yellow pages and find your local sheet metal supplier. You'll get all sizes on Ebay but the postage will kill you.

Keep it local, and if you need small bits I have found that donating to their tea fund gives you a pretty endless supply of these smaller bits.
