The thermostat in the engine is 88 degrees. Can anyone recommend what temperature switch should be used in the radiator for the cooling fan?

That's more than the thermostat. So when the thermostat is fully open, for a while it's going to be drawing water from the radiator to try and cool the engine, and actually be raising temperature until the fan kicks in (in traffic). I assumed you would want it set to less?

I did not want to over cool the engine.

I have a pinto that is happy from about 85 to about 105 degrees where the pressure cap allows the coolant to boil.

95 is a compromise like most things are.

If the stat opens at 85 then that is the bottom end of the operating range. I would have thought 95 would be fine,  after all you only want to stop it from boiling and that won't happen until over 100 due to the coolant being under pressure. That's how my red top is set up and it works fine
