Good idea, I need to do this job.

It is possible with rivets and paste, but you will keep chasing leaks. Most workshops will weld for you and are reasonably priced.
-
I used some mig welding wire fed from the suspension mount then used another piece to fish it out of hole in roll bar.
-
I used Landover mounts 10mm thread, both sides OEM part number NRC9560.
Cheap enough on eBay.
-
The best solution would be 3D printed in black, I don't know anyone with a printer so I just used black silicone sealer.
I did drill the roll bar and fed cable from rear brake lights.

Happy to share my spreadsheet - https://zerolifebuild.blogspot.com/p/costs.html
I got most of my stuff from GBS, including all the (reconditioned) parts, so I did not use a donor and my kit is Ford-based, not Mazda, but may help...
My cost was around £17k but I did get a new, crated engine (£1k) and, like I said, no cheap donor to get bits from.
Brave man, I stopped counting after £10k so she who must be obeyed never finds out.

What do you use on the gel coat for a good long lasting shine and to protect from the elements?

I find myself with some spare time and some old garage signs so thought I would tidy the garage. I have been putting this off for 5 years.
Show me a picture of your garage, car shed, man cave or workshop.

The best I have seen was individual LEDs drilled through the wheel arch, looked very smart.

Only 269 days for santa.

Another one to the list, just got some old garage signs so I might make the garage a little more homely.
