The Exmo did not have a build manual as such.
It came with 2 or 3 VHS tapes.
I understand that the series 3 tapes can be found on utube, the exmo had the same rear end as the series 3 but strut front suspension being the main change.

I am aiming to have a run over Saturday camp the night and return sunday.
I try to avoid motorways and trunk roads so the trip will be a bit longer but more fun.
One thing to consider is that the S7 kit came out per SVA/IVA when just getting a MOT and a declaration of where the parts came from was all that was needed to get the car road legal.
You say that this is a rolling chassis, does it come with a V5 stating make is robin hood, if so you are in for an easier time.
If not then you will have to pass IVA to get on the road.

looking at your picture, the ones covering the entire quarter would be what came with the kit.
The cycle wings were not a normal fitment for S7s but putting our own stamp on details is what makes these cars individual.

make holes in the gasket to just clear the rivnut insert.
A smear of blue hylomar on both sides of the gasket should help seal.

Does it even have a number plate?
If it has check its mot history and if it is correctly registered as a robin hood, if it is then you just need to apply for a V5 in your name supported by the sale invoice.

As you can see in picture 11 it is a simple 2 outlet jet, one for each choke.
Also picture 6 is the power valve working?
Is the enrichment (accelerator) pump working?
Look down the carb barrels and when the throttle is opened you should see a squirt of petrol into both chokes.
Could it actually be something like your propshaft being out of balance?
Yes the sierra has rubber dampers in the gear lever but these were noise limiters rather than vibration dampers so I suspect that something is well out of ballance.

No paperwork whatsoever? Not even a V5?
Without reciepts or V5 it will be tricky to get registered as you have to prove that it is not stolen.
It is not robin hoods that are the problem.
The problem is unregistered cars of any type, there are a lot of abandomed kit builds (of all makes) out there for many reasons, it is just that robin hood produced more kits per year (approx 600 per year) than almost all other manufactures combined from mid 90s for the next 15 years. So there are more uncompleted robin hoods out there than most other single make.
There are probably a higher percentage of the high priced multistage payement kits unfinished out there.
Chin up 2Bs were designed to pass IVA. SVA came allong when government realised that this was a profit center and upped prices to suit, little else changed so properly put together it will pass.
You can but try for the water pump at a motor factors.
Burton power stock just about everything for a pinto but are not the cheapest, and yes they do sell spares.
